Salad, I love you

When the summer comes, we are all excited about the warmth, the good weather, the food, and the colors that surround us. Every year when the summer as the summer is closer, I cannot stop thinking about which amazing food I am going to make with the enormous quantity of good and fresh products available. Imagine zucchini, eggplants, tomatoes, beans, lettuces, and so on… then the heat comes along when your appetite drops and the only thing you think of is how to get a fresh drink or an ice-cream which is fresher than cooking a meal.

When I first moved to Italy, some years ago, we talk about 20 years now, I would never have imagined how the heat could be so high to cut off your appetite. Here, they say that humidity kills you more than the warmth itself. So, people eat just so little during the summer because otherwise, you could fall asleep at your desk just after lunch. We Italians, lovers of food, we find a solution to anything: make a nice and fresh salad and you will still have your meal and less risk to have a full stomach which can conciliate with the snooze in the afternoon. I am a salad lover, I have a bowl of salad at each meal, even a small bowl. On the one side, it gives you the impression of eating enough, if you are on a diet; on the other hand, it is healthy, if your meal did not include some veggies, the salad will give you some fiber necessary for your digestion. With the years, I am mastering the salad universe, mixing and mix and make it a full meal and tasty. What would you include in your salad to make it delicious? What will give it some consistency? But light? I love the classic recipe as well as Caprese, Bresaola, or Cesar salad… But nothing gives me more satisfaction like those colorful where I mix the ingredients according to my humor and taste and what I have in the cupboard. I create my own, I will be looking to them with pleasure and will eat them with appetite. Well not always, it comes out as I prefigured in my head, sometimes, I eat them because that they are the only meal I have, other days, I am in ecstasy when looking at my plate.

Today, I am sharing with you one recipe that you can make within 30mn. You will need:

- 1 cup of Quinoa

- 1 cup of sweet corn

- ½ red onion

- 2 carrots

- 1 sweet potato

- 1 cucumber

- 4 radishes

In a pan, cook the quinoa in cold water, then drain it and reserve. Peel and cut in small cubes and cook the sweet potato and reserve. While cooking the quinoa and potato, you can slice and cut the raw ingredients, such as carrot (julienne style), cucumber, onion, and radishes. Mix them in a big bowl then add the quinoa and potato when they are cold. Add some dressing, for this Salad I made one of honey, apple cider, olive oil, salt, and pepper. Then mix it altogether, and your Salad is ready.

For a better taste, make it a day before or in the morning for dinner. The resting time will give

the ingredients  time to come well together. This one you can eat it as a main or side

when having some fish or meat.
